SERVINGS: makes 2 Chocolate Cakes


INGREDIENTS
  • 1 Cup + 2 Tablespoons granulated sugar (238g)

  • 1 1/2 Cups brown rice flour (209g)

  • 1 Cup + 2 Tablespoons (not packed) brown sugar (157)

  • 1 1/4 Cup Dutch Cocoa, with alkali (117g)

  • 1/2 Cup Sorghum Flour (72g)

  • 1/2 Cup tapioca flour (68g)

  • 1 Tablespoon baking powder double-acting (15g)

  • 2 1/2 Teaspoons xanthan gum (11g)

  • 2 Teaspoons baking soda 10g)

  • 2 Teaspoon salt (10g)


 
NOTES:
  • IMPORTANT: Stir then whisk all ingredients together to ensure the ingredients are mixed evenly.

  • Dutch Coca with Alkali is an unsweetened darker cocoa powder. Be sure to check the ingredients when buying. Do not substitute with another type of cocoa powder.
