INGREDIENTS
Delicious Chocolate Cake Mix (makes one 8-inch layer)
1 3/4 Cups Inspiration Baking-Chocolate Cake Blend
1/2 Tablespoon Vanilla Extract
1/3 Cup Softened Butter or Margarine
2 Large Eggs
1/2 Tablespoon Apple Cider Vinegar
3/4 Cup Milk
Orange Creamsicle Cake (makes one 8-inch layer)
1/4 Cup Tapioca Flour/Starch
1 Teaspoon Baking Powder Double-Acting
3 Tablespoons Softened Butter or Margarine
2/3 Cup Granulated Sugar
2 Whole Eggs
1/2 Tablespoon Distilled White Vinegar or White Wine Vinegar
1/2 Tablespoon Vanilla Extract
1/4 Teaspoon Orange Extract
1 Tablespoon Applesauce, Mayonnaise or Sour Cream
1 Orange Zested (reserve 1 Tablespoon for Orange Butter Cream frosting)
1/4 Cup Orange Juice
1/4 Cup Milk of Choice (unflavored)
Orange Butter Cream Frosting (can be used for Filling or choose to frost the entire cake)
8 Ounces Softened Cream Cheese
1/2 Cup Softened Butter
4 Cups Powdered Sugar
1/2 Teaspoon Vanilla Extract
1/4 Teaspoon Orange Extract
1 Teablespoon Orange Zest
DIRECTIONS
Orange Creamsicle Cake
Preheat oven to 350°F. Grease and flour two 8-inch round cake pans. One for the orange cake and one for the chocolate cake.
Combine dry ingredients together except granulated sugar, whisk and set aside.
Using a hand mixer, beat eggs and sugar together on high until pale and frothy. About 3 minutes. Set aside.
In a separate bowl add all wet ingredients and butter. Blend on low for about 30 seconds. Add the dry ingredients, and blend till combined. Slowly add milk and orange juice. Scrape the bowl.
Add eggs and sugar mixture. Blend on medium high until smooth. About 2 minutes
Pour batter into baking pan. Cook 30-35 minutes until a toothpick comes out fairly clean.
Remove from oven and place on a wire rack for 10 minutes. Turn out onto parchment paper to completely cool before frosting. Keep on wire rack while cooling.
Frost cake with the Orange Butter Cream Cheese Frosting
Delicious Chocolate Cake
No need to clean your stand mixer's bowl or beaters. The orange flavor will not transfer to the chocolate cake as the residual is minimal.
Put all wet ingredients for the chocolate cake in your stand mixer bowl.
Blend on low for about 30 seconds.
Scrape the bowl and add dry ingredients. Wet ingredients will be a little lumpy.
Blend on medium-high for about 2 minutes, scraping the sides of the bowl at least once.
Place batter in one of the other prepared baking pan.
Place both pans into your pre-heated oven. Bake 25-30 minutes until a toothpick inserted into each comes out fairly clean.
Place both pans upright on your wire rack for 10 minutes. Then, turn your cakes out onto parchment paper to completely cool before frosting. Keep on your wire rack while cooling.
Orange Butter Cream Cheese Frosting (use for filling or frost the entire cake)
Place cream cheese and butter in the bowl and beat until creamy. It takes about 30 seconds, but you should stop and scrape the sides several times.
Turn the mixer on low and slowly add the powdered sugar, scraping the bowl several times. Add the vanilla, orange extract and orange zest to the butter and cream cheese. Cream together. Then slowly add the powdered sugar. Blend on high until the frosting is light and fluffy (1-2 minutes).
Frost the cake with the Orange Butter Cream Cheese Frosting starting with the chocolate cake on the bottom.
Option: Frost the cake with Chocolate Fluffy Frosting.
NOTES:
You can tint the frosting for color.
Add fresh orange slices or candied orange slices for decoration on top.
Use the Orange Butter Cream Frosting in the middle and frost the outside with dark chocolate frosting. It creates a masterpiece, adding amazing flavor to each bite.
