French Crepes (Gluten-Free & Dairy Free)

INGREDIENTS

DIRECTIONS
  1. Put all the wet ingredients in a medium sized bowl. Then add the dry ingredients on top. Mix well until there are no clumps.

  2. Preheat your non-stick frying pan over medium-high heat. If you think the batter might stick, make sure to spray your pan.

  3. Measure 1/3 cup of batter and pour it into the center of your preheated pan. Quickly pick up the pan using the handle and roll the pan in a circular pattern. Your batter should be evenly spread out in a circle. Quickly return the pan to the stove top.

  4. Cook for about 1 minute and then gently flip over. Once you flip it, the other side shouldn't need as much time to cook.

  5. Remove your cooked crepe, put it on your plate and add your "toppings" to the center of it. Then gently roll the crepe and serve.

 
NOTES:
- You can pre-cook your crepes and store them in the fridge for 1-3 days. Just rewarm prior to serving.
- I love using vegan yogurt as the base "topping" for the center of my crepes!
