This harvest soup has been a favorite at my table for many years, and it never fails to bring smiles. Made with hearty pumpkin and sweet apple chunks, it captures the flavors of the season in a warm and comforting way. Naturally gluten free, this recipe is wholesome, simple, and always a crowd-pleaser—perfect for family dinners or holiday gatherings. For an extra special touch, serve it alongside warm gluten free dinner rolls to make it a complete, cozy meal.

INGREDIENTS
3 Tablespoons butter or margarine
1/2 medium white onion finely chopped
1--15oz can of pumpkin pie mix
2-3 sweet apples cut into chunks
3 1/2 cups chicken broth (can substitute vegetable broth)
3/4 Cup canned coconut milk
DIRECTIONS
In a large sauce pan, melt butter on low heat.
Add finely chopped onions to the butter and saute' until soft and transparent. About 5 minutes on medium low heat.
Add chicken broth and stir. Turn heat to low.
In a separate bowl combine Pumpkin Pie Mix and canned coconut milk. Whisk until smooth.
Add mixture to the sauce pan and whisk together.
Add chopped apples and stir.
Turn to medium heat, stirring until the apples begin to soften. About 10 minutes.
You want the apples soften, but still a bit firm.
Serve warm. Garnish with a mint leaf and small seeds for an extra gourmet touch.
Add a salad and warm bread to complete the meal.
NOTES:
Leftover soup can be stored in the refrigerator for several days.
