Ol’ Fashioned Pancake and Waffle Mix


Our extra-tasty ‘Ol Fashioned Pancake and Waffle Mixes are sold in cases containing six 16-ounce boxes or in 6-box, “build-your-own” cases with other Inspiration Mixes of your choosing.  Each box of ‘Ol Fashioned Pancake and Waffle Mix makes about 60 four-inch pancakes or 50 four-inch waffles.  The mixes are blended in a fully gluten-free facility in southern Oregon.  All ingredients are non-GMO and free of gluten, wheat, casein, dairy, and soy.

Our pancakes and waffles can be made using a vegan option:  replace 2 eggs for pancake recipe with 1/3-cup applesauce or 1 banana and replace 3 eggs for waffles with ½-cup applesauce or 1 ½ bananas.

Ingredients:  white rice flour, sweet white rice flour, evaporated cane juice, quinoa flour, coconut flour,
cornstarch, non-aluminum double-acting (corn) baking powder, baking soda, xanthan gum, sea salt, and citric acid.

Pancakes (Makes 8, 4-inch pancakes)

½ cup Pancake Mix

1 tablespoon vanilla

2 eggs

1 tablespoon oil

2/3 cup milk of your choice

Heat griddle to 375 degrees F or until water drops sizzle on the surface. If not using a non-stick surface, oil the griddle. Or oil the griddle even if it is non-stick. Works better that way.

Whisk together vanilla, eggs, oil, and milk.

Add the ½ cup mix and blend until ingredients are combined. There will still be lumps. Let sit for 5 minutes.

Pour ¼ cup per pancake on the griddle. Flip over when bubbles appear on the surface and cook until golden brown.

Waffles (Makes 4, 6-inch waffles)

1 cup Pancake Mix

1 tablespoon vanilla

3 eggs

3 tablespoons oil

1 cup milk of your choice

Turn on waffle maker to high. Apply a light amount of oil.

Whisk together vanilla, eggs, oil, and milk.

Add mix and blend until batter is smooth. Let sit for 2 minutes.

Pour the recommended amount of batter for your waffle maker. Cooks in 3-5 minutes or up to 7 minutes for a crispier waffle.
