Each pouch of your all-purpose Baking Mix makes a 9-inch loaf of wonderfully toastable sandwich bread or rich banana bread. We also have recipes for baking blueberry muffins or cornbread. We sell your ever-useful Baking Mix as a single 16-ounce bag, in cases of 6 mixes, or as a part of 6-mix, “build-your-own” cases with other Inspiration Mixes of your choosing. We also sell your Baking Mix in 5-pound bags.

We have your all-purpose Baking Mixes blended for you in a fully gluten-free facility in Washington state.  All ingredients are non-GMO and free of gluten, wheat, casein, dairy, nuts, and soy.

Description

Ingredients: White rice flour, evaporated cane juice, tapioca starch, cornstarch, sorghum flour, potato starch, baking powder (sodium acid pyrophosphate, sodium bicarbonate, corn starch, monocalcium phosphate), sea salt, and xanthan gum. Ingredients are non-GMO.

Homemade Bread (Makes 1 loaf)

1 bag Baking Mix

1 cup warm water

2 tablespoons yeast

3 tablespoons melted butter or oil

3 egg whites

2 teaspoons vanilla or maple syrup

1 tablespoon apple cider vinegar

    Hint: For softer bread, add 1 tablespoon applesauce

Grease 9-inch loaf pan. Heat oven to 200°F, turn off 5 minutes before placing loaf in oven.

Add dry yeast to mix, stir together, and set aside. 

Using a stand mixer, lightly whip the wet ingredients until frothy (1 minute). 

Add dry mix and blend on medium-high for 2 minutes until it is like thick cake batter, scraping bowl several times.

Put dough into bread pan and gently mound with spatula into a loaf shape. Place in warmed oven for 30-40 minutes or until dough rises to top of pan. Remove from oven.

Preheat oven to 350°F. Bake for 30-40 minutes. Test for doneness by inserting a toothpick in the center. Remove from oven and let stand for 5-10 minutes. Remove from pan; place on wire rack and allow to cool completely before slicing.

Vegan Alternative (Banana Bread):

1 bag All-Purpose Baking Mix (454 g)
2 teaspoon cinnamon
½ cup oil
½ cup applesauce
½ cup granulated sugar
½ cup packed brown sugar
1 tablespoon vanilla
1 ½ cups (4-5) RIPE bananas, thoroughly mashed with ½ teaspoon baking soda
Optional: 1 cup chopped walnuts

Grease 9-inch loaf pan. Preheat oven to 350°F. In a bowl stir together 1 pouch of All-
Purpose Baking Mix and cinnamon. In another large bowl, combine oil, applesauce, sugar,
brown sugar, vanilla, and mashed bananas (with the baking soda). Stir by hand or use a
hand mixer on low until well blended. Add the dry mixture to the wet ingredients using a
wire whisk or the hand mixer on low until well blended. Add the optional chopped nuts by
hand. Pour into the greased loaf pan. Bake for 40-50 minutes until a toothpick stuck into
the loaf comes out fairly clean. Remove from oven and rest for 5 minutes before removing
from pan and placing on a wire rack until completely cooled. You can freeze the bread up to
3 months by wrapping cooled loaf in plastic wrap, then placing inside a freezer bag.
