Fish Stick Finger-Food Fun

In our families, fish sticks were a treat growing up. Seems crazy now with so many kinds on the market, but way back when there were very few fish stick makers in America. Besides the novelty of having them, fish sticks were finger food. You could pick them up and dip them in tartar sauce or ketchup before biting into their crunchy goodness. That made them Fish Stick Finger-Food Fun.
Our recipe uses our Crispy Batter Mix and Cod as the fish source. Cod has just the right flaky texture. But, of course, you can also use any white fish you'd like. Lost of folks pair fish sticks with French fries and macaroni salad...always a hit.

Equipment

  • Baking Sheet with Cooking Rack
  • Dry Measuring Cups and Spoons
  • Liquid Measuring Cup
  • Aluminum Foil
  • Round Pie or Cake Pans (3)
  • Fork or Small Whisk
  • Non-stick Vegetable Oil Spray

Ingredients
  

  • 1 Cup Inspiration Bakery and Mixes Crispy Batter Mix
  • 1 Pound Cod Fillets (slightly frozen)
  • 2 Cups Bread Crumbs (gluten-free) or Rice Crackers (plain, finely crushed in a blender)
  • 2 Eggs (whole)
  • Tartar or Cocktail Sauces or Ketchup

Instructions
 

  • Preheat your oven to 425° F.
  • Cut your slightly frozen Cod into 1" by 3" strips. They don't have to be exact dimensions.
    Note: you can also prepare larger pieces if you want to prepare sandwich-sized fish portions
  • Put 1 cup of Inspiration Bakery and Mixes Crispy Batter Mix into one of your pie or cake pans
  • Put 2 eggs in another pie or cake pan and beat with a fork or small whisk until blended
  • Put 2 cups of bread (or rice) crumbs into your third pie or cake pan and spread out evenly
  • Cover your baking sheet with aluminum foil and crimp the edges up slightly to contain any spills that might happen during baking
  • Spray your wire rack with the non-stick vegetable spray. Put it on the foil-covered baking sheet inside the raised edges
  • Thoroughly coat the Cod in your Crispy Batter Mix, making sure all the edges are covered. Shake off any excess dry batter mix
  • Roll your dry-batter-mix-covered Cod in the egg and let any excess drip off
  • Put the Cod strip into the bread (or rice) crumbs and press down gently to make sure the crumbs stick. Cover all sides with the bread (or rice) crumbs
  • As you finish coating each piece of cod with bread (or rice) crumbs place it on your wire cooking rack. Repeat until all your pieces of cod are on the rack
  • Lightly spray the tops of the fish sticks with vegetable oil. A small amount will do
  • Put your fish sticks in the oven and bake for about 10 minutes or until golden brown. Temporarily remove the baking pan from the oven. Use your fingers to gently flip the fish sticks over (using tongs or a spatula will probably take the coating off)
  • Lightly spray the tops of the fish sticks with vegetable oil. A small amount will do
  • Put the baking pan back in the oven and bake for another 10 minutes
  • Throw away all unused dry batter mix, egg, and bread (or rice) crumbs
  • Take your Fish Stick Finger-Food Fun course out of the oven and serve warm with tartar or cocktail sauces or ketchup. Yummm!
