Vanilla Pudding
Can be used to make a fresh berry pie

INGREDIENTS
1/3 cup sugar (or substitute)
Dash of salt
3 Tablespoons of water
1 can (14 ounces) organic coconut milk or cream
2 Tablespoons of cornstarch
1 teaspoon vanilla

INSTRUCTIONS
Mix the cornstarch and coconut milk together with a wire whisk until well blended.

Place sugar, salt and water in a sauce pan. Pour the coconut milk mixture over the top and cook on medium heat until it begins to thicken like pudding.  This should take about 5 minutes.

Once it is thickened, remove from the stove and add the vanilla, stirring well.  Pour into cups, or leave in a bowl and refrigerate.

Other Recipes:
You can use this recipe to make banana pudding, or top with sliced strawberries, raspberries, or other fruit you like.

You can also make a strawberry pie.  Bake a pie crust using Inspiration Mixes Pie Crust Mix.  One bag will make two crusts. Let crust cool before filling.

Fill the bottom of the crust with the pudding mixture after it has been cooled.  If you want a lot of pudding, and just a topping of berries, double the vanilla pudding recipe above. Cover with fresh cut strawberries. Top with whip cream if tolerated. Cover and let refrigerate for about an hour before serving.
