Mexican Calzone
INGREDIENTS
Dad’s Pizza Crust Mix. 1 crust will make 2 large calzones or 4 small ones.
Prepare crust as instructed adding 2 tsp garlic salt, 1 tsp oregano, 1 tsp sweet basil, or any spices you like.
Divide one crust in 2 or 4 pieces.
Oil baking sheet, roll dough in circles. Refrigerate for at least 4 hours or overnight (covered). Remove from refrigerator and scoop sauce and cheese into dough.
Using a spatula, gently fold the crust on top and crimp
edges shut.
Calzone Sauce: (Homemade recipe below, or) Use one jar of prepared spaghetti sauce, one 6oz can of tomato paste combined.
Add chopped fresh spinach, 2 cups chopped mushrooms, 1 can chopped olives, sausage cooked and drained.
Set aside.
Mix 1 cup cottage cheese or ricotta cheese, 1 lb mozzarella cheese grated.
Brush top with egg white and 1 TBL water if desired.
Bake at 425°F for 15-20 minutes until crust is done.
Homemade Sauce
INGREDIENTS
1 pound ground turkey or hamburger
1/2 c onion, chopped fine
2 garlic cloves, minced
3/4 tsp ground cumin
1 1/2 tsp dark chili powder
1/2 cup red bell pepper, chopped fine
1 -- 16 ounce jar of salsa verde, fire roasted
INSTRUCTIONS
Heat a large skillet over medium high heat. Add meat and cook 5 minutes, stirring to crumble and drain. Add onion and garlic; continue to cook for an additional 4-5 minutes or until onions are translucent.
Add spices and cook for 1 minute to bring out the flavors in the spices. Add chopped pepper; continue to cook 1 minute. Remove mixture from heat and stir in salsa. Set aside.
