Fresh Strawberry Pie

INGREDIENTS
Inspiration Mixes Pie Crust Mix, One bag makes two crusts. (You can refrigerate the left over dough, or even freeze it). 
¼ tsp salt
1 cup sugar
1 TBL Lemon juice
½ cup water
3 cups sliced fresh strawberries
4 TBL cornstarch
1 cup cold water

INSTRUCTIONS
Prepare pie crust and let cool before filling.

Cut strawberries and set aside.

In sauce pan combine sugar and water.  Bring to a boil. 

Mix cornstarch into the cup of cold water to make a smooth paste, and add paste to sugar syrup in the pan.  Cook several minutes until mixture is transparent. 

Remove from heat and add salt and lemon juice. 

Spread berries evenly over the bottom of the pie shell.  Don’t do this until you are ready to pour the hot mixture over the top or it will make the crust soggy.

Pour cooked mixture over the berries.  Cool in the refrigerator for several hours or over night before serving.

Garnish with whipped cream and whole strawberries.
