Snickerdoodle Cookies
INGREDIENTS
1 box Cara’s Sugar Cookie Mix
½ cup butter or substitute
¼ cup shortening
1 cup sugar
2 eggs
1 TBL gluten free vanilla
2 TBL granulated sugar
2 tsp cinnamon
INSTRUCTIONS
Preheat oven to 375°F.
Mix 2 TBL granulated sugar and 2 tsp cinnamon together and set aside.
Cream butter, shortening, sugar, vanilla and eggs together.
Add Cara’s Sugar Cookie Mix to creamed mixture.
Refrigerate for 1 hour
Roll one inch balls in sugar mixture.
Place on ungreased cookie sheet 2 inches apart. Gently flatten the balls a little bit.
Bake 10-12 minutes. Be careful not to overcook. They will be very light on the bottom. Makes 30-2 inch cookies.
