Pumpkin Pie
For a 9" pie

INGREDIENTS
You will need 1 package of Inspirations Mixes Pie Crust Mix. Prepare crust per directions. To make a flakier crust you can use 1/3 cup chilled butter cut into 1/2 inch pieces (or butter substitute), and 1/3 cup chilled shortening. Chill for at least 2 hours or overnight.

To make the filling for a 9” Pumpkin Pie, you will need:
One 15 oz can Farmer’s Market Organic Pumpkin Pie Mix
¾ cup evaporated milk or coconut milk from the can
2 eggs lightly beaten

INSTRUCTIONS:
Preheat oven to 425°F

Roll out pie crust and place in the pie pan.  You can store the second crust in the refrigerator or make a second pie.

Prepare filling:  Empty pumpkin pie mix into a mixing bowl and stir in milk or coconut milk and eggs.  Pour into pie shell.

Cover the edges of the pie crust with foil, so it will not burn. Place on a cookie sheet.

Bake for 15 minutes at 425°F and reduce temperature to 350 degrees and bake an additional 35-40 minutes. 

Thoroughly cool pie before serving.
