You can store the second crust in the refrigerator or make a second pie. Prepare filling: Empty pumpkin pie mix into a mixing bowl and stir in milk or coconut milk and eggs. Pour into pie shell. Cover the edges of the pie crust with foil, so it will not burn. Place on a cookie sheet. Bake for 15 minutes at 425°F and reduce temperature to 350 degrees and bake an additional 35-40 minutes. Thoroughly cool pie before serving.
