Pound Cake
INGREDIENTS
1 box Cara’s Sugar Cookie Mix
2 sticks butter or substitute
2 tsp gluten free vanilla
Zest of 2 oranges
3 large egg yolks
3 large eggs
1 ¼ cup sugar
2 TBL applesauce
INSTRUCTIONS
Preheat oven 350°F.
Beat butter, Cara’s Sugar Cookie Mix, orange zest, vanilla and applesauce until creamy. Set aside.
Combine egg yolks, whole eggs, sugar. Beat on medium high with whisk attachment until pale and thick. About 4 minutes.
Use mixer or hand stir paste and egg mixture together until blended. This will be slightly lumpy. Don’t over beat.
Scrape batter into a 9 x 4 ½ x 3 inch metal loaf pan greased with butter or substitute. Bake 60-70 minutes. Insert toothpick to test, this should not come out completely clean. Be careful not to overcook. Remove from oven. Let cake sit 30 minutes to continue to cook. Turn out and cool on wire rack completely before serving.
