Grandma Bertha's Chewy Oatmeal Cookies
INGREDIENTS
1 ½ cup Alanah’s Cookie Mix
3 cups uncooked gluten free oats old fashioned
¼ tsp baking soda
¼ tsp salt
½ tsp cinnamon
¾ cup butter or shortening
1 ¼ cup light packed brown sugar
1 egg
1/3 cup milk, rice milk, or coconut milk
1 ½ tsp gluten free vanilla
Optional: add raisins, cranberries, nuts or chocolate chips
Variation: Banana Oatmeal Cookies: increase soda to ½ tsp
and stir in 1 cup mashed banana into shortening mixture.
INSTRUCTIONS
Preheat oven to 375°F. Lightly grease baking sheet.
Combine in a bowl, gluten free oats, Alanah’s Cookie Mix, baking soda, salt, cinnamon. Set aside.
Mix butter or shortening, brown sugar, egg, milk, vanilla into a large bowl. Beat on medium speed until well blended. Mix dry ingredients into creamed mixture until well blended. Stir in raisins, chocolate chips or nuts if tolerated.
Drop by rounded teaspoonfuls 2 inches apart on baking sheet. Bake 10-12 minutes until lightly brown. Cool two minutes on baking sheet before removing. Makes about 2 ½ dozen cookies.
