Mock Cream Cheese Frosting

INGREDIENTS
3 cups powdered sugar
1 cup softened butter
2 TBL lemon juice (fresh)
2 TBL coconut milk
1 TBL grated lemon peel
Optional: 2 TBL of finely chopped walnuts
for a garnish

INSTRUCTIONS
Place softened butter in mixing bowl. Whip butter on high speed for 1-2 minutes. Add lemon juice, grated lemon peel , half of the powdered sugar and 2 TBL of coconut milk and blend. Add the rest of the powdered sugar and more coconut milk if needed. Consistency will be a light and fluffy frosting.
