Ole Fashioned Gingerbread Cookies

INGREDIENTS
2 ¾  cup Mom's Homemade Baking Mix
½ cup firmly packed brown sugar
¾ cup softened butter or substitute
½ cup light molasses
2 eggs
1 ½  teaspoons ground cinnamon
1 TBL vanilla
1 tsp gound allspice
1 ½  tsp ginger
Tapioca flour for rolling the dough out.

INSTRUCTIONS
Cream together brown sugar, butter, molasses, and eggs on medium until creamy about 1-2 minutes.  Scrape bowl often.

Mix the rest of the dry ingredients together, and add to creamed mixture along with the vanilla.  On low speed mix for another 1 to 2 minutes scraping bowl, until well mixed.  Cover and place in the refrigerator for at least 4 hours, or overnight.

Pre-heat oven to 350°F.  On well floured surface, roll ¼ of the dough in the flour.  Using a rolling pin, roll out dough until ¼ inch thick.  Place rest in refrigerator. Cut out cookies, place on ungreased baking sheet 1 inch apart.  Bake for 8-10 minutes until no indentation remains when touched.  Remove immediately.  Cool completely.  Makes about 48- 2 inch cookies.
