Dad's Pizza Crust
Makes 2 14" pizzas

INGREDIENTS
1 box Dad’s Pizza Crust Mix
1 ½ cup water
2 TBL active dry yeast or 2 packets Rapid Rise Yeast
3 TBL shortening
4 egg whites or egg substitute*
Tapioca flour for rolling the dough out
For best results use a stand mixer.

INSTRUCTIONS
Preheat oven to 425°F.
Mix dry yeast in Dad’s Pizza Crust Mix and set aside.
Melt shortening in 1 ½ cup warm water.
Pour melted shortening and water into Dad’s Pizza Crust mix and blend.
Add egg whites and blend. Beat on med-high speed for 2-4 minutes.
Spoon half the dough onto a greased cookie sheet or round pizza pan. Sprinkle tapioca flour on top and roll to ¼" thick. Leave a small rim around the edges. Repeat for second half or store in refrigerator.
Add toppings of your choice.
Bake 20-25 minutes until crust is lightly brown on the bottom.
Cool for 5 minutes before cutting & serving.
