Corn Bread

INGREDIENTS
1 cup Mom’s Homemade Baking Mix
1 cup yellow gluten free cornmeal
1 TBL baking powder
¼ cup butter + 3 TBL honey
beaten together until light and fluffy
2 eggs
1 cup milk, coconut milk, or rice milk
¼ cup oil

INSTRUCTIONS
Preheat oven 400°F. Grease 9"x9" baking pan.
Combine Mom’s Homemade Baking Mix, cornmeal, baking powder, set aside.
In a separate bowl mix eggs, milk, to butter & honey mixture.
Add dry mix to liquid and beat with electric mixer until smooth, about 1 minute.
Pour into pan. Bake for 20-25 minutes.
