Cinnamon Rolls
INGREDIENTS
1 box Mom’s Homemade Bread Mix
2 TBL instant dry yeast granules
1¼ cup water
1 TBL apple cider vinegar
¼ cup oil
2 egg whites + 1 whole egg
1 TBL vanilla
2 TBL applesauce
*Optional: substitute ¼ cup buttermilk powder for ¼ cup Mom’s Homemade Bread Mix.
Cinnamon Filling: 5 TBL melted butter, cinnamon to cover the butter and 1 cup brown sugar. Use a pastry brush to spread the butter.
INSTRUCTIONS
Pre heat oven to 200°F, then turn off.
- Place Mom’s Homemade bread mix in a bowl and add yeast. Mix with a wire whisk and set aside.
- Place egg whites and whole egg, warm water, vinegar, oil, vanilla, and applesauce in a mixing bowl.Use a stand mixer, on medium low speed, and mix together.
- Slowly pour the dry ingredients into the bowl of wet ingredients and mix together for about 2 minutes on medium. Scrap the blow to ensure everything is mixed well.
- Liberally sprinkle tapioca flour onto a work surface. Roll dough into the tapioca flour making sure all sides are covered in the flour.
- Using a rolling pin, roll the dough out into a rectangle the size of your baking dish 9 X 13 inches.
- Cover the dough with melted butter, then cinnamon, then brown sugar.
- Roll the dough up length wise so that the roll is equal to the 13 inches. You may need to flour the knife each time you cut the roll as the dough is sticky. Cut into 1 inch slices.
- Place the pieces into a greased 13X9 inch baking dish. It will make 12 cinnamon rolls.
- Cover pan with parchment paper . Place in warm oven until they double in size. 30-45 minutes.
Pre-heat oven to 350°F. Cook for about 15 minutes until golden brown on top. Remove from oven. You can take some butter and run it over the top when it is hot to add a little moisture to the top of the cinnamon roll. Cool, then frost.
Frosting Instructions:
1 cube softened butter or butter substitute. 3 cups organic powdered sugar, 2 tsp vanilla, ¼ cup milk, coconut milk or rice milk. Place butter in bowl and whip. Add vanilla, milk and ½ of the powdered sugar and mix. Add more powdered sugar until well blended. Frosting will be light and fluffy. Spread generously on the cinnamon rolls.
