Carrot Cake Muffins or Carrot Cake
INGREDIENTS
1 cup Millet Oat Bread & Baking Mix
2 tsp baking soda
¾ ground cinnamon
¼- ½ tsp ground nutmeg
optional ¼ tsp ground cloves
¼ cup oil
¾ cup packed brown sugar
2 large eggs
½ cup applesauce or crushed pineapple
2 tsp pure gluten free vanilla extract
1 ½ cup finely shredded carrots
Optional: 1/3 cup finely chopped walnuts
INSTRUCTIONS
Preheat oven 350°F. Line 12 muffin cups with paper liners.
For cake grease 9"x9" pan.
Mix 1 cup of gluten free Millet Oat Bread & Baking Mix, baking soda, ground cinnamon, and nutmeg together. Set aside.
In a large bowl, whisk together oil, brown sugar, and eggs until well combined.
Stir in applesauce, vanilla, and shredded carrots.
Fill muffin cups evenly or pour into cake pan. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
