Blueberry Muffins
INGREDIENTS
1 cup blueberries + ¼ cup sugar. Mix together and set aside.
1 ¾ cups of Mom’s Homemade Baking Mix
¼ cup sugar
2 ½ tsp baking powder
2 eggs
¾ cup milk, buttermilk, water, coconut milk, or rice milk
2 TBL applesauce
2 tsp gluten free vanilla
1/3 cup oil
INSTRUCTIONS
Preheat oven to 400°F.
Grease muffin pan or use muffin cups. Makes 12 muffins.
Combine dry ingredients in a separate bowl and set aside.
Mix rest of ingredients together. Add to dry mix and hand stir until moistened. This will be lumpy.
Fold in 1 cup of blueberry mixture.
Fill muffin cups evenly. Bake 15-18 minutes until golden brown. Remove from heat and cool for 5 minutes.
