Apple Spice Muffins
INGREDIENTS
1 ¾ cups Millet Oat Bread & Baking Mix
1 cup chopped or grated apple + ½ cup sugar + ½ tsp cinnamon. Mix together and set aside.
¼ cup brown sugar
½ tsp cinnamon
¼ tsp allspice
¼ tsp nutmeg
2 ½ tsp baking powder
2 eggs
¾ cup milk, buttermilk, water, or coconut milk
2 TBL applesauce
2 tsp gluten free vanilla
1/3 cup oil
INSTRUCTIONS
Preheat oven to 400°F
Grease muffin pan or use muffin cups.
This will make 12 muffins.
Combine dry ingredients in a separate bowl and set aside.
Mix rest of ingredients together. Add to dry mix and hand stir until moistened. This will
be lumpy.
Fold in apple mixture.
Fill muffin cups evenly. Bake 15-18 minutes until golden brown. Remove from heat and cool for 5 minutes.
