Proofing Yeast

The reason you'll want to proof your yeast before using it in the mix, is to make sure the yeast is good. If it doesn’t foam in the bowl, then it is no longer good. There is nothing worse than using yeast that doesn’t work and your bread does not rise. The yeast and sugar mixture combined help the yeast foam.
